I didn't cook dinner...shoot me! I accomplished a lot outside the house today yet never got around to cooking a real dinner. But I am one step ahead for tomorrow. I made the kids almond coconut muffins for breakfast! Yes, at 10:30 at night I made muffins for tomorrow's breakfast. Ay ya yi!

Day One- Success!
I did it. I cooked and slightly crafted today.
Let's start with the slight crafting. I knitted. 24 rows to be precise. Not much done in the way of scrapbooking or creating cards today. However I did find a local scrapbooking store which I intend on visiting this week or next week... probably next week. The positive side is all my photos from 2009 to present are all organized, along with the photos to be crafted into cards. Now my lazy but has to get off the couch and start scrapping this week!
I like to start with the negative and end with the positive. The cooking went fabulously! How could it not? I used a crock pot. The Greek Chicken with Orzo was so good that the kids ate it up before I remembered to put on the final touch, the feta cheese. My lovely husband, a self proclaimed foodie, commented that the addition of the feta cheese really brought out the Greek flavor (that was his second bowl). Since the whole family loved it so much, I forgot to take a picture of it! And now, all that is left is an empty crock pot waiting to be washed.
The second endeavor was Strawberry Cupcakes. Ab Fab Baby, Ab Fab!

A simple vanilla cupcake with a chunk of cream cheese and strawberry preserves. Topped with a homemade strawberry butter-cream frosting. A big hit with the hubby, kids and even my mother. I am not a big fan of butter-cream frosting myself, but adding the strawberry changed up the flavor for me, in a positive way.
Tomorrow is Monday, I have a ton of errands to do, causing me to be gone most of the day. Then A has indoor soccer practice at 5:30 to 6:30, after which I will be lugging A and G to a pre-PTO meeting because Big Daddy will be at work. So in short, I need a nice easy meal... grilled chicken in a light cabbage slaw perhaps?? Cabbage slaw including grated carrots, dried cranberries and perhaps some sunflower seeds? We'll see tomorrow!

That's It! I've had it!!!
Yes, sad but true. I am at my wits end! I injured my knee, or rather my knee injured me in mid-December. Since then I have been on crutches, in a bledsoe brace where my leg was locked in an extended position and now in a buttress brace using a cane. I have not worked since December 10Th and am awaiting surgery. I find out more exactly next Friday.
In that time though we have had 3 major snowstorms. Three, totaling 5 snow days for the kids. Include in that, almost 2 weeks off for Christmas Vacation. That equals MUCH MUCH MUCH family time. Which I should be thoroughly enjoying but... I am tired of Sponge Bob, House of Anubis and American Chopper. I am depressed because I am stuck in the house and there is currently another storm looming for Wednesday. I look outside and all I see is snow, snow and oh did I mention, more snow.
And did I mention I am not getting paid? Yes that is true. I have been able to work for the the past two weeks, but only in a light duty manner. However, due to the physical nature of my job as a nurse, my light duty status can not be accommodated. I have used up all my time between sick and vacation time and since I am able to work, I do not qualify for advanced sick leave and/or donated time from other employees.
So aside from crying, which I have been doing a lot of, I am "putting on my big girl panties and going to make lemonade out of lemons." Here's the plan. I'm going to go crazy. Oh wait, I already am. Never mind that. I am going to take an idea from the book and movie Julie and Julia. I am going to cook and craft through my injury.
What does that mean exactly? Well I have a great crock pot book and a great cupcake book. Since I love cupcakes and food from the crock pot, I will be cooking and baking up a storm. And because I truly have nothing better to do, I will be a fury of crafting. I love scrapbooking, but due to my busy work schedule and spending so much time in Haiti last year, I am REALLY behind. In addition to scrapbooking, I am picking up knitting (again). I only can do the knit stitch, so scarves and blankets it is!
So here we go. Tomorrow the plan is to have Greek Chicken and Orzo made in the crockpot with a side of Creamy Strawberry Cupcakes. Key word here is "plan". Hopefully I will get the laundry all done tonight and perhaps a scarf too. Here's to hoping!
